Molten Orange Lava Cake

Oil + Vinegar – Pairing – Christmas Citrus:

  • BLOOD ORANGE infused olive oil
  • CARA CARA ORANGE VANILLA white balsamic vinegar

Molten Orange Lava Cake

Ingredients

  • 5 tablespoons + 1 teaspoon DANA’s Blood Orange olive oil
  • 8 oz. dark chocolate
  • 1 teaspoon orange juice
  • 1 tablespoon DANA’s Cara Cara Orange Vanilla balsamic vinegar (or Cranberry Pear)
  • zest of 1 orange
  • 1/3 cup granulated sugar
  • 3 tablespoons flour
  • ¼ teaspoon salt
  • 4 eggs
  • icing sugar, to garnish

Method

  1. Preheat oven to 400° F.
  2. Use one tbsp of DANA’s Blood Orange olive oil to coat the inside walls and bottom of six, 4 ounce mason jars or ramekins.
  3. In a double boiler over simmering water, melt the chocolate.
  4. Remove from heat and whisk in the remaining Blood Orange olive oil, orange juice, DANA’S Cara Cara Orange Vanilla (or Cranberry Pear) balsamic and orange zest.
  5. Add the sugar, flour, and salt and mix until combined.
  6. Using a hand mixer, beat in the eggs to the chocolate mixture one a time, then continue beating for about 3 minutes, until the chocolate turns a slightly lighter shade of brown.
  7. Divide the batter evenly amongst the jars and place in a deep baking dish.
  8. Pour hot water into the pan until it reaches halfway up the sides of the ramekins.
  9. Bake until the center is just set, but still wobbly, approx. 25 – 35 minutes.
  10. Remove from the oven and allow to cool slightly. Dust with powdered sugar, if desired. Serve warm.
